2 T canola oil
1 large sweet onion, diced
2 tsp cumin
3 sweet potatoes, peeled and cubed
6 cups chicken broth
1 1/2 cup plain yogurt
2 T chopped cilantro
In soup pot, heat oil and saute onions and cumin 3-4 minutes. Add potatoes and chicken broth and bring to a boil. Reduce heat and simmer 20-25 minutes. Puree soup with yogurt and cilantro. Delicious!
